The Gerson Institute offers an amazing nutritional program and other holistic treatment modalities for healing cancer and other Illnesses, including Hepatitis. Migraines. Arthritis. Heart Disease. At the Gerson Institute, treating and preventing cancer involves eating Gerson’s Hippocrates Soup that heals and strengthens the immune system and kidneys. It was created by the Greek philosopher, Hippocrates, himself. 


Here is a picture taken of the ingredients of this soup before cooking and taking the fiber out. 


This is celeriac or celery root below, one of the ingredients of Hippocrates Soup!!!!! It includes the rare VItamin K and is very nutritious!

Ingredients:
1 medium celery root, fibers removed, roughly chopped
         
4-5 tomatoes (1 and 1/2 lbs) roughly chopped
1 medium parsley root or 1/4 bunch of fresh parsley


 1-2 medium yellow onions, roughly chopped
2-3 medium potatoes (1 lb) roughly chopped
Purified water
(12 Servings)              
Directions: Place all ingredients in a 5 qt pot
4-5 cloves of garlic              

2 small or one large leek, roughly chopped     



Add purified water to slightly cover vegetables
Recipe #2: Step One: Hippocrates Soup Stock:
For two people use a
large (4-5 quart) pot. Clean vegetables, chop,
do not peel. Cover with
purified water. Simmer slowly for about 3-4 hours,
then strain.
Toss out the exhausted vegetables. Makes about
4 quarts of soup
stock (2 days worth).
Soup Stock
1 Cup  celery knob          1 Cup parsley root
3 Cups leeks               3 Cups onion
A handful of fresh thyme   Garlic as desired
Recipe #2: Step Two: Add The fresh vegetables.*
Makes 4 servings.
Serving size:
2 Cups
The Soup
1 quart of the above soup stock, strained
1 Cup leeks                ½ Cup onion
½ Cup tomatoes          2 Cups potatoes
½ Cup parsley root         1 Cup carrots
½ Cup celery root (okay to infrequently substitute
stalks of celery, chopped)
Add the chopped vegetables to the stock, simmer
slowly,
until the potatoes are done. 
It can be served after being ground through 
a Foley food
mill (the traditional way),
put through a blender, or eaten as a chunky stew.
Use within
3 days.
*Note: The basic idea is to consume 1 Cup
of the soup stock
and 1 Cup of fresh
vegetables 2 times per day. The medicinal
ingredients of
“Hippocrates Soup” are
leeks, celery root, and parsley root.
The potatoes are for
calories and protein.
The onions and tomatoes are added for flavor!
The flavor
is optional.
The following suggestions are very different
in flavor,
they are simply
suggestions to get you started. Have fun with this —
experiment! Enjoy!
 Italian Tomato Soup: Per 1 Quart soup stock
add: 1/2
Cup of sliced potato,
celery, and green beans. Allow to simmer til tender.
Add:
1/2 Cup sliced zucchini, 
bell pepper, tomato, 1 clove garlic, fresh onion.
Soak sun
dried tomatoes in stock
then blend in blender and add to soup.
Herbs: basil, oregano,
rosemary.
Oriental Soup: Slice vegetables very thin, julienne:
celery,
bell pepper, zucchini.
Add sliced Jerusalem artichoke, mung bean sprouts,
sliced
cabbage. Add lemon
juice and garnish with green onions and fresh cilantro.
Orange Soup: To Soup Stock, add sweet potato, potato,
squash, and carrots.
Add a little cumin and ginger. And just before serving
add the juice of one orange.


Broccoli Soup: To stock add broccoli stems,
potato, apple,
celery, and onion.
Grind in blender, return to heat and add broccoli
tops ‘til
just tender.

This column, "Let Food be thy Medicine and Medicine be thy Food" is inspired by my 88 year old, academically gifted Mother, still living independently & healthily.

My great great grandparents, J.J. Hawes and his wife (on his left holding the baby) and their 14 children in rural Lincolnton, GA around the end of the 19th century or early part of the 20th century. They are standing in front of their home on their farm.

My Mother
My mother at her graduation from Ohio State University at about 77 with her PhD in Spanish. She has an undergraduate degree only in nutrition also from OSU. The nutrition department offered her a full scholarship for their PhD program, but she chose to do her doctorate in Spanish instead. She graduated with her PhD at 77 and got the highest grade on the Oral Exam in Spanish in the history of the OSU Spanish Department.

My mother was born in rural Lincolnton, Georgia in 1936 to he mother, Sarah Joe Gartrell, whose mother was Naomi Hawes. (the young girl on the bottom left hand of the J.J. Hawes Family Photo above taken at the end of the 19th century or the beginning of the 20th century). The family were prosperous farmers.

My mother was apparently born academically gifted to an academically gifted family. My great great aunt Carrie Gartrell was a professor at Emory University. Carrie was my great grandfather Frank Gartrell's sister from Washington, GA.

My mother received a scholarship from the Catholic Church she attended as a teenager to attend the Catholic private all girls school in Columbus, Ohio called Rosary. They also gave her a full scholarship to Ohio State University. Later, she got a scholarship from the human nutrition department at Ohio State University to study human nutrition through the doctorate level which she did for some time before falling in love with the Spanish language and then getting her PhD in Spanish. She obtained the highest score on the oral exam for her PhD in Spanish in the history of the Spanish Department at the Ohio State University at the age of 77!

She taught Spanish as a TA for years after obtaining her PhD, and her students nominated her one year for the best teacher of the year award.

She was still auditing graduate level Human Nutrition classes at Ohio State University at the PhD level when the Coronavirus broke out and Ohio State closed. Her teacher had told her she was a genius. She was 85 years old.

Ingredientes:

1 raíz de apio mediana, sin fibras, picada en trozos grandes

         

4-5 tomates (1 libra y 1/2) picados en trozos grandes

1 raíz de perejil mediana o 1/4 manojo de perejil fresco



 1-2 cebollas amarillas medianas, picadas en trozos grandes

2-3 papas medianas (1 lb) picadas en trozos grandes

Agua purificada

(12 porciones)

Instrucciones: Coloque todos los ingredientes en una olla de 5 qt.

4-5 dientes de ajo


2 puerros pequeños o uno grande, picados en trozos grandes




Agregue agua purificada para cubrir ligeramente las verduras.

Receta #2: Paso Uno:Caldo de sopa de Hipócrates:

Para dos personas use un

olla grande (4-5 cuartos). Limpiar las verduras, picar,

no pelar Cubre con

agua purificada. Cocine a fuego lento durante aproximadamente 3-4 horas,

luego colar.

Tirar las verduras agotadas. hace sobre

4 cuartos de sopa

stock (valor de 2 días).

Caldo

1 taza de nuez de apio 1 taza de raíz de perejil

3 tazas de puerro 3 tazas de cebolla

Un puñado de tomillo fresco Ajo al gusto

Receta #2: Paso dos:Agregue las verduras frescas.*

Rinde 4 porciones.

Tamaño de la porción:

2 tazas

La sopa

1 litro del caldo de sopa anterior, colado

1 taza de puerros ½ taza de cebolla

½ taza de tomates 2 tazas de papas

½ taza de raíz de perejil 1 taza de zanahorias

½ taza de raíz de apio (está bien sustituirlo con poca frecuencia)

tallos de apio, picados)

Agregue las verduras picadas al caldo, cocine a fuego lento

despacio,

hasta que las papas estén listas.

Se puede servir después de ser molido

una comida foley

molino (a la manera tradicional),

poner a través de una licuadora, o comer como un estofado con trozos.

Usar dentro

3 días.

*Nota: La idea básica es consumir 1 Taza

del caldo de sopa

y 1 taza de fresco

Verduras 2 veces al día. el medicinal

 Sopa De Tomate Italiana:Por 1 cuarto de caldo de sopa

añadir: 1/2

Taza de patata en rodajas,

apio y judías verdes. Deje hervir a fuego lento hasta que estén tiernos.

Agregar:

1/2 taza de calabacín en rodajas,

pimiento, tomate, 1 diente de ajo, cebolla fresca.

tomar sol

tomates secos en stock

luego mezcle en la licuadora y agregue a la sopa.

Hierbas: albahaca, orégano,

Romero.

Sopa Oriental:Cortar las verduras muy finas, en juliana:

apio,

pimiento morrón, calabacín.

Agregue rodajas de alcachofa de Jerusalén, brotes de frijol mungo,

rebanado

repollo. Añadir limón

jugo y adorne con cebollas verdes y cilantro fresco.

Sopa de Naranja:Al caldo de sopa, agregue camote, papa,

calabaza y zanahorias.

Agregue un poco de comino y jengibre. Y justo antes de servir

agregue el jugo de una naranja.



Sopa de brocoli:Para caldo agregue tallos de brócoli,

patata, manzana,

apio y cebolla.

Muele en la licuadora, regresa al fuego y agrega el brócoli.

Mis tatarabuelos, J.J. Hawes y su esposa (a su izquierda sosteniendo al bebé) y sus 14 hijos en la zona rural de Lincolnton, GA, a fines del siglo XIX o principios del siglo XX. Están parados frente a su casa en su granja.


Mi madre

Mi madre en su graduación de la Universidad Estatal de Ohio alrededor de los 77 años con su doctorado en español. Ella tiene una licenciatura en nutrición también de OSU. El departamento de nutrición le ofreció una beca completa para su programa de doctorado, pero ella optó por hacer su doctorado en español. Se graduó con su doctorado a los 77 años y obtuvo la calificación más alta en el Examen Oral en Español en la historia del Departamento de Español de OSU.
